TYPES, LISTED IN ORDER OF INTENSITY:

CORATINA - BITTER & SPICY, WITH A HINT OF ARTICHOKE FLAVOR, THE CORATINA IS THE MOST INTENSE FLAVOURED OLIVE OIL IN THE MONOVARIETALE LINE.  BEST WHEN USED ON GRILLED MEATS, SHELLFISH & SEAFOOD.

PICHOLINE - WHILE NOT AS INTENSE AS THE CORATINA, THE PICHOLINE IS STILL QUITE AN INTENSE OLIVE OIL.  THIS SPICY GREEN TOMATO FLAVOURED OLIVE OIL IS IDEAL ON GRILLED MEATS, SEAFOOD AND HEARTY SOUPS.

FRANTOIO - A FRUITY, HERB FLAVOURED OIL, THE FRANTOIO HAS THE SAME LEVEL INTENSITY AS THE PICHOLINE.  IT IS BEST IN PASTAS, THICK SOUPS AND SAUCES.  ALSO WONDERFUL ON TOP OF GRILLED WHITE MEATS.

NOCIARA -  TASTING SIMILAR TO A JUST HARVESTED BITTER GREEN TOMATO, THE NOCIARA OIL IS GREAT BOTH COOKED OR RAW WITH MUSHROOMS, ARTICHOKES OR MATURE CHEESES.  

OGLIAROLA - THIS FRUITY, BITTER YET SPICY OLIVE OIL IS OF MEDIUM INTENSITY.  GREAT FOR COOKING LEGUMES OR ON GRILLED GAME MEAT.

LECCINO - A MILD, FRUITY ALMOND TASTING OLIVE OIL.  BEST WHEN USED RAW ON A SALAD OR IN A OLIVE OIL DIP.  ALO WONDERFUL WHEN USED IN CAKE BAKING.  

CAROLEA -  THE MILDEST OF THE MONOVARIETALE OLIVE OILS, THE CAROLEA IS GREAT ON VEGETABLES, LEGUMES AND RED MEATS.  IT IS ALSO WONDERFUL WHEN USED FOR FRYING.
