A classic dish of the Sicilian cuisine, this risotto with eggplant and peas will surprise you for sure! A unique mix of authentic Italian traditions and unique taste.

Preparation: Cook as traditional risotto, gradually adding water or broth.  Alternatively bring to a boil 1/3 cup of water with two tablespoons of extra virgin olive oil. Add rice and stir occasionally and cook until the water is completely absorbed.

Useful tips: Before serving, add 2 diced cherry tomatoes and some fresh parsley.

Ingredients: Carnaroli rice, eggplant , tomato, peas , aromatic herbs, salt.
